Chocolate Cake By The Ocean



As life is about love and the pursuit of happiness you know it's not about the
pursuit of un-happiness!

Lovers, love and I am a lover type person, love sick, as love is like the chocolate cake,
you miss it when it's gone. Two crazies make a right so let us have cake! *Note Song!

~~~~Awesome Kahlua Cake

Ingredients:

    1 (18 ounce) package devil's food cake mix
    1 (3 1/2 ounce) package instant chocolate pudding mix
    1 cup sour cream
    1/2 cup vegetable oil or 1/2 cup canola oil
    1/2 cup water
    4 eggs
    3/4 cup Kahlua
    1 teaspoon cinnamon (optional)
    1 (12 ounce) package chocolate chips
    1 cup chopped walnuts (optional)
    Glaze
    1 cup confectioners' sugar
    2 -4 tablespoons Kahlua

Directions:

  1. Set oven to 350°F.
  2. Set oven rack to second lowest position.
  3. Generously grease and flour a bundt pan.
  4. In a large bowl combine the cake mix with pudding mix, sour cream, oil, water, eggs, Kahlua and cinnamon; beat until well blended.
  5. Stir chocolate chips and walnuts.
  6. Pour into a greased and floured bundt pan pan.
  7. Bake at 350°F for 45-60 minutes, or until the cake tests done.
  8. For the glaze; mix confectioners sugar starting with 2 tablespoons Kahlua until smooth adding in more Kahlua until desired consistency is achieved.
  9. Pour over cake.


~~~~Chocolate Cake with Jack Daniels Fudge Icing

Ingredients:
    For the Cake:
  • 1 box dark chocolate cake mix
  • 1 (3.4 ounce) box instant chocolate pudding
  • 1 cup sour cream
  • 1/2 cup vegetable oil
  • 1/2 cup warm water
  • 4 eggs
  • 3 cups semi-sweet chocolate chips
    For the Jack Daniels Fudge Icing:
  • 1/4 cup Jack Daniels whiskey
  • 8 tablespoons (1 stick) butter
  • 1 1/2 cups granulated sugar
  • 1/3 cup evaporated milk
  • 1/2 cup semi-sweet chocolate chips
Instructions:
  1. Preheat oven to 350°.
  2. Combine cake mix, pudding, sour cream, oil, water, and eggs in electric mixer with paddle attachment. Beat together on medium for 5 minutes until fluffy and thoroughly combined.
  3. Stir in chocolate chips.
  4. Pour into cake pans. Depending on size, bake for 25 minutes (for 6 inch cake) or until toothpick inserted comes out clean (you may have some chocolate on toothpick from the chips). Increase baking time for larger cake.
  5. NOTE: If you want a stronger Jack Daniels flavor, you can add 1/4 cup to the cake batter as well as the fudge icing. Or add more to the fudge icing (add additional chocolate chips too so the icing doesn't thin out too much).
  6. Let cake cool.
  7. In a medium saucepan, combine butter, sugar, and evaporated milk.
  8. Stir together until rolling boil and time for 1 minute, stirring constantly.
  9. Remove from heat and add in chocolate chips and Jack Daniels.
  10. Immediately pour over cake (will set up quickly).
